Ingredients: 1 ripe banana. 1 cup all-purpose flour. 1 tablespoon sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup milk. 1 egg. 1 teaspoon vanilla extract. 2 tablespoons butter, melted. Optional toppings: sliced bananas, maple syrup, chopped nuts.
Instructions: Mash the ripe banana in a mixing bowl. In a separate bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the milk, egg, vanilla extract, and melted butter. Add the mashed banana to the wet ingredients and mix well. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or additional melted butter. Pour 1/4 cup portions of the pancake batter onto the hot skillet, spacing them apart. Cook until bubbles form on the surface of the pancakes, then flip them and cook until golden brown on both sides. Remove the pancakes from the skillet and keep warm. Serve the banana pancakes with your choice of toppings, such as sliced bananas, maple syrup, or chopped nuts.
