What Heat Actually Does to Honey
Most people understand in a vague way that raw honey is better than processed honey. Fewer people understand the specific mechanism — what exactly gets destroyed when honey is heated, and why that matters in practice.
Honey in its natural state contains a complex mixture of enzymes, the most significant of which is diastase, which breaks down starches, and glucose oxidase, which produces hydrogen peroxide and contributes to honey's antimicrobial properties. It also contains invertase, which converts sucrose into fructose and glucose during the ripening process in the hive, and various antioxidants, including flavonoids and phenolic acids, that vary significantly depending on the floral source.
Heat degrades all of these. The critical threshold sits around 40 degrees Celsius, roughly the maximum temperature of a healthy hive. Beyond that point, enzyme activity begins to decline measurably. At the temperatures used in commercial processing, which can reach 70 degrees or higher to ensure the honey flows quickly through filtration equipment, the degradation is substantial.
What you're left with is still chemically honey. It still contains natural sugars. It still tastes sweet. The Crystallization Question Settled Once and For All
If there is one piece of misinformation that costs genuine raw honey producers more sales than any other, it is the widespread consumer belief that crystallized honey has gone bad. It hasn't. Not even slightly.
Crystallization is a natural, inevitable process driven by the ratio of glucose to fructose in honey. Glucose is less soluble than fructose and will naturally form crystals over time, particularly when stored at cooler temperatures. The rate varies significantly by variety. Some honey, naturally high in fructose, can remain liquid for a year or more under good storage conditions. Wildflower and mountain varieties, with their higher glucose content, often crystallize within weeks or months.
Crystallized honey is not spoiled honey. It has not lost its properties. It has not been contaminated. In many parts of the world, crystallized honey is actively preferred — the texture is spreadable, it doesn't drip, and the flavour is often described as more concentrated.
To return it to a liquid state: place the jar in a bowl of warm water, not hot, and leave it. The water temperature should feel comfortable to the touch, around 35 to 40 degrees Celsius. Patience works better than heat here. Never microwave raw honey and never pour boiling water around a jar of it. You will reliquefy the honey and simultaneously destroy the enzymes and antioxidants that justified buying the raw variety in the first place.
