Ingredients: 1 and 1/2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup unsweetened cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 2 large eggs. 1/2 cup whole milk. 1/2 cup vegetable oil. 2 tsp pure vanilla extract. 1 cup boiling water. 1 cup semi-sweet chocolate chips. 1/2 cup heavy cream.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined. Stir in the boiling water until the batter is smooth. The batter will be thin, but that's okay. Fold in the chocolate chips. Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. While the cupcakes are baking, prepare the chocolate ganache by heating the heavy cream in a microwave-safe bowl for 1-2 minutes until hot but not boiling. Pour the hot cream over the semi-sweet chocolate chips and let it sit for 2 minutes. Stir the chocolate and cream together until smooth and shiny to create the ganache. Once the cupcakes are done, remove them from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Once the cupcakes are completely cool, spoon the chocolate ganache over the tops of each cupcake. Allow the ganache to set for a few minutes before serving.
