Recipe : Les Madeleines Aux The Vert
Works done earlier than expected yesterday, resulting to some free time until the end of my working hours. Well, free time = time for doing my trial! 😁
I usually wanted to do entremet for my trial, but as I thought entremet would take longer time to make, I decided to go for the quick one - Madeleine. Madeleine basically is one of typical French gateaux de voyage, known for its distinct seashell shape.
Commonly madeleine comes out in vanilla flavour, but I chose to make mine with green-tea flavour. Why? Because I imagine that green tea definitely will give good colour, good scent, and good distinct bitter tasting (but not too much) to the madeleine. Just it has to have the perfect texture (crusty outside, moist inside) and BAM! Everyone will love it! 😉

Recipe:
- 1 whole egg
- 50 g sugar
- 40 g honey
- 2 g salt
- 95 g flour
- 3 g Baking Powder
- 10 g green tea powder
- 1 whole egg + 20 ml milk, mix
- 100 gr butter, melted until brown (beurre noisette)
- 20 gr white choco chip
- 35 gr almond chunks
How to make:
1. Whisk the first egg, sugar, honey, and salt until foamy and paler in colour.
2. Add the flour, baking powder, and green tea powder (already sifted) into the egg mixture. Mix well.
3. Pour the egg+milk, mix again. Last, pour the beurre noisette in 3 parts, mixing well before each addition until the mixture is well mixed.
4. Rest in the chiller for 30 minutes.
5. Take out from the chiller. Fold in the white choco chip and the almond chunks with plastic spatula.
6. Put the dough into the piping bag and pipe into the madeleine mold ( I use silicon mold).
7. Bake at 200 C for 4 minutes, then decrease the temperature to 168 C and bake for another 7-8 minutes.
8. Let it cool and voila, Les Madeleines Aux The Vert is done!😁
