The EU appears to imply that the adoption instinct seems to have developed as a response to the greatly diminished numbers of Taung after the first war they had with the Republic.
I like to think the adoption instinct was in the Taung from the beginning - the dramatic drop in their population just kicked it into overdrive. I also headcanon that since they were very strong and very tough, evolution nerfed them by giving them very low birth rates and fertility. So they’re biologically wired to consider babies and children extremely valuable - every child is precious to them and must be protected and nurtured.

Please tell me more about the shame of disowning a parent and mandalorian parenting standards
I thought the shame would be directed more towards the parent. People would be like dude how did you mess up this badly that your kid wants to divorce you? Kids do say all sorts of shit when they're mad (I hate you, I wish you'd fall off a cliff etc.) but everything I've read about Mandalorians seems to suggest that they regard children as being...well, capable of making informed and reasonable decisions.
Parenting standards hm...in EU canon I know that the whole letting your kid handle dangerous weapons thing might not strike us as something a reasonable parent would do. On the other hand, Mandalorian kids usually start their martial training around 8 (at least one EU Mando started at 3) so I think it's reasonable to assume that safe blaster use is one of the first things they learn.
So teaching your kids how to defend themselves is an essential part of Mandalorian parenting.
On the more emotional side of things, I can't say if this is the case for all Mandalorian parents, but Goran Beviin in the EU certainly doesn't do the whole "crying is weak" thing:
“It’s okay to cry,” Beviin said quietly. “We all cry sooner or later. I have, that’s for sure.”
Other than this stuff I'm really not sure what else I can glean from the EU besides the obvious "don't be a child abuser".
