A delicious gluten-free German apple pancake made with paleo-friendly ingredients, perfect for a cozy breakfast or brunch.
Ingredients: 4 large eggs. 1/2 cup coconut milk. 1/4 cup coconut flour. 1/4 cup almond flour. 2 tbsp maple syrup. 1 tsp vanilla extract. 1/2 tsp ground cinnamon. 1/4 tsp sea salt. 2 medium apples, thinly sliced. 2 tbsp ghee or coconut oil.
Instructions: Set oven temperature to 400F 200C. Eggs, coconut milk, almond flour, coconut flour, maple syrup, cinnamon, vanilla extract, and sea salt should all be thoroughly mixed together in a bowl. In a 10-inch ovenproof skillet, preheat the coconut oil or ghee over medium heat. Evenly distribute the apple slices across the skillet's bottom. Cover the apples with the batter. After transferring the skillet to the oven, preheat it and bake the pancake for 20 to 25 minutes, or until it is golden brown and puffed. Cut into slices and serve warm, topped with a dollop of coconut cream or a drizzle of maple syrup, if desired. Have fun!
