This recipe is a tasty change from the traditional Monte Cristo sandwich. Instead of bread, it uses pancakes, which make the dish sweet and savory and great for breakfast or brunch.
Ingredients: 6 pancakes. 6 slices of ham. 6 slices of Swiss cheese. 3 eggs. 1/4 cup milk. Salt and pepper to taste. Butter for frying. Powdered sugar for garnish. Maple syrup for serving.
Instructions: Lay out 3 pancakes and top each with a slice of ham and a slice of Swiss cheese. Place the remaining 3 pancakes on top to make sandwiches. In a shallow bowl, whisk together eggs, milk, salt, and pepper. Heat butter in a skillet over medium heat. Dip each pancake sandwich into the egg mixture, coating both sides. Place the sandwiches in the skillet and cook until golden brown on both sides and the cheese is melted, about 3-4 minutes per side. Remove from skillet and let cool slightly. Dust with powdered sugar and serve with maple syrup for dipping.
