Ingredients: 2 large sweet potatoes, peeled and cubed. 1 onion, chopped. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 4 cups vegetable broth. 1 can 14 ounces coconut milk. 1 teaspoon turmeric powder. 1 teaspoon cumin powder. 1 teaspoon coriander powder. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro leaves for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add onions, garlic, and ginger. Saut until onions are translucent. Add sweet potatoes, turmeric, cumin, and coriander. Cook for 5 minutes, stirring occasionally. Pour in vegetable broth and coconut milk. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until sweet potatoes are tender. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return it to the pot. Season with salt and pepper to taste.
