Ingredients: 3 cups all-purpose flour. 1 teaspoon baking soda. 2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 3/4 cup brown sugar, packed. 1/2 cup molasses. 1 large egg. 1 teaspoon vanilla extract. Edible lace doilies. 1 egg white, lightly beaten for brushing. Assorted colored sanding sugars optional.
Instructions: Put the flour, baking soda, ginger, cinnamon, cloves, and salt in a medium-sized bowl and mix them together with a whisk. Put away. Mix the butter and brown sugar together in a large bowl until they are smooth and creamy. Put the egg, molasses, and vanilla extract in the bowl. Mix everything together well. Slowly add the dry ingredients to the wet ones and mix them together until a dough forms. Make two equal pieces of dough and flatten each one into a disc. Cover with plastic wrap and put in the fridge for at least two hours, or until it gets firm. Warm the oven up to 350F 175C and put parchment paper on baking sheets. One disc of dough should be rolled out to about 1/4-inch thick on a lightly floured surface. Press edible lace doilies onto the rolled-out dough to make patterns that are very complicated. Be careful when taking the doilies off. Use the cookie cutters to make the cookies into the shapes you want, then move them to the baking sheets that have been prepared. Lightly beat the egg white and brush it on the cookies. You can decorate the cookies with colored sanding sugars if you want to. For 8 to 10 minutes, or until the edges are just beginning to turn golden. Be careful not to let it bake too long. Let the cookies cool for a few minutes on the baking sheets before moving them to wire racks to cool all the way.
