Ingredients: 2 lbs beef stew meat. 1 cup beef broth. 1/4 cup soy sauce. 2 tbsp brown sugar. 2 cloves garlic, minced. 1 inch fresh ginger, grated. 1 onion, diced. 2 carrots, sliced. 2 potatoes, diced. 1/2 cup frozen peas. 2 tbsp cornstarch. 2 tbsp water. Salt and pepper to taste.
Instructions: Put the beef, beef broth, soy sauce, brown sugar, garlic, ginger, onion, carrots, and potatoes in a slow cooker. Mix well. Cook on low for 7 to 8 hours or high for 4 to 5 hours, until the beef is soft. In a small bowl, mix cornstarch and water 30 minutes before you serve. Add the frozen peas and stir them into the slow cooker. Put the lid on and cook until the sauce gets thicks. Add pepper and salt to taste. Serve hot, and if you want, top with green onions.
