Streusel Topping: ・1 ½ tbsp unsalted butter, softened ・⅓ cup brown sugar ・1 tbsp gluten free all purpose flour ・1 teaspoon cinnamon ・⅛ teaspoon salt Pumpkin Bread: ・15 oz can unsweetened pumpkin puree ・1 ½ tsp cinnamon ・1 tsp salt ・¼ tsp ground nutmeg ・⅛ tsp ground cloves ・1 cup sugar ・1 cup brown sugar ・4 oz cream cheese, softened and chopped into pieces ・4 eggs ・2 tsp vanilla extract ・½ cup vegetable oil ・¼ cup milk or non-dairy milk ・2 ½ cups gluten free all purpose flour (I use @Cup4Cup) ・1 ½ tsp baking powder ・½ tsp baking soda 1. In a small bowl place all the streusel topping ingredients. Use fingers to rub the butter into the dry ingredients or use a fork to combine thoroughly. 2. Preheat oven to 350°F. Grease two 8 ½" X 4 ½" loaf pans. 3. In a large saucepan combine the canned pumpkin, cinnamon, salt, nutmeg, and cloves. Cook and stir over medium heat for 7 minutes. The mixture will reduce as the liquid from the pumpkin evaporates. 4. Remove from heat and add sugar, brown sugar, and cream cheese. Whisk vigorously until cream cheese melts and smoothly combines in the mixture. Add eggs, vanilla, milk, and oil. Whisk to combine. 5. To the pumpkin mixture add flour, baking powder, and baking soda. Stir until well combined and no flour pockets remain. The batter will be very thick. 6. Divide batter between the two prepared loaf pans and smooth tops. Sprinkle streusel topping on. Bake for 50-54 minutes, or until a toothpick inserted in the middle comes out clean. 🎃 Happy Halloween! 👻 For breakfast, I had gluten free chocolate pumpkin bread & golden milk. How I made my simple gf vegan chocolate pumpkin bread: In a bowl, I combined 2 cups oat flour, 1 cup pumpkin puree, 1 tablespoon cinnamon, 1 teaspoon vanilla extract, 1 cup agave nectar and 2 flaxseed eggs. Grease pan and bake in a preheated oven, on 375 degrees f, for 35 minutes. How I make my golden milk: I heated a cup full of soy milk with 2 teaspoon of turmeric, a thumb size grated ginger, a pinch or two of black pepper and a tablespoon of agave nectar. Then I topped it with some ground cinnamon. Its so good and so good for you.
