Ingredients: 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup cacao powder. 1/4 cup coconut sugar. 1/2 tsp baking powder. 1/4 tsp salt. 1/4 cup coconut oil, melted. 1/4 cup almond milk. 1 tsp vanilla extract. 1/4 cup maple syrup. 1/4 cup hot water. 2 tbsp cacao powder for sauce. 1/4 cup hot brewed coffee for sauce. 1/4 cup coconut cream for sauce.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, cacao powder, coconut sugar, baking powder, and salt. In another bowl, whisk together melted coconut oil, almond milk, vanilla extract, and maple syrup. Pour the wet ingredients into the dry ingredients and mix until well combined. Grease four ramekins or oven-safe dishes and evenly divide the pudding mixture among them. In a separate bowl, mix 2 tbsp cacao powder with hot brewed coffee until smooth to make the sauce. Pour the sauce over the pudding mixture in each ramekin. Bake in the preheated oven for 25-30 minutes or until the puddings are firm to the touch. While the puddings are baking, heat the coconut cream in a small saucepan until warmed through. Once the puddings are done, remove them from the oven and let them cool slightly.
