They're also simple to make and can be eaten as a snack or dessert!
Ingredients: 1 cup pitted Medjool dates. 1/4 cup natural almond or peanut butter. 1/4 cup honey or maple syrup. 1 cup roasted unsalted almonds, roughly chopped. 1 1/2 cups rolled oats gluten-free if needed. 1/4 cup unsweetened coconut flakes. 1/4 cup sesame seeds. 1/2 teaspoon fine sea salt. 1/2 cup dark chocolate chips or chopped dark chocolate 70-85% cacao. 1 tablespoon coconut oil.
Instructions: Put parchment paper around the edges of an 8x8-inch 20x20 cm baking dish. Mix dates, peanut or almond butter, honey, or maple syrup in a food processor until the mixture is smooth. Add the almonds, oats, coconut flakes, sesame seeds, and salt to the mixture that you just put in a big bowl. Mix everything together well. Spread the mixture out evenly in the baking dish that has been prepared. Press down hard to make it compact. Over low heat, stir chocolate chips and coconut oil in a small saucepan until smooth. Spread the chocolate that has been melted over the granola in the baking dish. Put the dish in the fridge for at least an hour so that it can set. When it's done, lift the parchment paper off the brownie slab to take it out of the dish. Cut it into bars. Keep in the fridge for up to a week in a container that won't let air in.
