A healthy quinoa granola that is crunchy and full of almonds, seeds, and dried cranberries. It is sweetened with honey and baked until it is just right.
Ingredients: 1 cup quinoa, rinsed and drained. 1 cup rolled oats. 1/2 cup almonds, chopped. 1/4 cup pumpkin seeds. 1/4 cup sunflower seeds. 1/4 cup honey. 2 tablespoons coconut oil, melted. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup dried cranberries. 1/4 cup shredded coconut.
Instructions: Preheat oven to 325F 163C. In a large bowl, combine quinoa, rolled oats, almonds, pumpkin seeds, and sunflower seeds. In a separate bowl, mix together honey, melted coconut oil, vanilla extract, cinnamon, and salt. Pour the wet ingredients over the dry ingredients and stir until well combined. Spread the mixture onto a lined baking sheet in an even layer. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crisp. Remove from the oven and let it cool completely. Stir in dried cranberries and shredded coconut. Store in an airtight container and enjoy with yogurt or milk!
