Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 cups Greek yogurt vegetarian-friendly. 1/2 cup vegetable oil. 2 large eggs vegetarian-friendly. 2 tsp vanilla extract. 1 cup hot water. 1 cup semisweet chocolate chips. 1/2 cup heavy cream. 1/4 cup unsalted butter. 1/2 cup powdered sugar. 1 tsp vanilla extract. 1/2 cup chopped walnuts or pecans optional.
Instructions: Set the oven temperature to 175C 350F. Butter and dust three 8-inch circular cake pans. Sift the flour, sugar, baking soda, cocoa powder, baking powder, and salt into a large mixing bowl. To the dry ingredients, add the eggs, Greek yogurt, vegetable oil, and vanilla extract. Blend until thoroughly blended. Once the batter is well combined and smooth, stir in the hot water. It's acceptable that the batter will be thin. Evenly divide the batter between the cake pans that have been prepared, then smooth the tops. A toothpick inserted into the center of the cakes should come out clean after 25 to 30 minutes of baking in a preheated oven. After the cakes have cooled in the pans for ten minutes, take them out and let them cool fully on a wire rack. Make the chocolate ganache while the cakes are cooling. The heavy cream should be heated in a saucepan until it almost boils. After turning off the heat, add the chocolate chips. After a minute, give them a stir to ensure smoothness. Add the vanilla extract and stir. After the cakes cool completely, cover one cake layer with a layer of chocolate ganache. Top with another layer of cake and continue. Lastly, put the third cake layer on top and pour the remaining ganache over the whole cake. You can optionally top the ganache with chopped pecans or walnuts as a garnish. Before serving, let the cake cool in the fridge for at least one hour. It will aid in the ganache setting. Enjoy your Triple Layer Greek Yogurt Chocolate Fudge Cake, now that it's vegetarian!
