Morning power shake
So now I have a new plan - I’m buying a camper van and I’ll drive around Europe with Mia. It won’t be Miss Sunshine alike, as this dream is still to come, but something more affordable, read old and not so pretty most probably. But who cares, Europe here we come! And now the reality check - did you ever try to buy a camper van? OMG, so much to know, to check, to learn about, to realise. Especially when your soon to be car is older than it should. Most probably the smartest think to do will be to buy a few books about how to fix an engine and so all the other car parts that I don’t even know exist. There is a light in this tunnel though. My dad is a pro in all cars related so I can always make a hot line with him, or FaceTime and maybe even we can fix something together on a road :D Fingers crossed!
And now the recipe. This is something I’ll be making on a road (you see, I already can’t stop writing about it). I made Mia drink it, most probably she thought it would be sweet, but surprisingly, she did not stop drinking. This is a truly cool recipe. I found it by accident and felt like there’s no other way than to make it. It can be breakfast, lunch, snack or even a dinner drink. I chose to have it for breakfast, because, what can I say, I like breakfasts most. It comes from one of my favourite cookbooks - Simplicious by Sarah Wilson. Have you ever heard about a morning shake made not with milk in any form but a stock? Well, trying new things is good, so just try it. Plus this one gives you a lot of energy to come up with some crazy ideas like I did.
You will need (for 2):
1,5 cup zucchini
1/2 cup frozen peas
1/2 avocado
2 cups vegetable stock, cold
juice of 1 lemon
1 garlic clove
pinch of salt and pepper
2 handfuls watercress
yogurt for serving
Place everything except from yogurt in a blender and blend it baby! Serve each glass with a tablespoon of yogurt.
