This Mexican Green Rice is a flavorful and easy side dish that pairs perfectly with your favorite Mexican-inspired main courses. The salsa verde adds a tangy kick, while the cilantro and cumin infuse the rice with delicious flavor.
Ingredients: 2 cups long-grain white rice. 1 1/2 cups chicken broth. 1 cup salsa verde. 1/2 cup chopped fresh cilantro. 1/2 cup chopped onion. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon ground cumin. Salt and pepper to taste.
Instructions: In a skillet, heat olive oil over medium heat. Add onions and garlic, cook until softened. Stir in rice and cumin, cook until rice is lightly toasted. Transfer mixture to slow cooker.
