Ingredients: 1 box of your favorite cake mix. 1 cup water. 1/2 cup vegetable oil. 3 large eggs. 2 cups mixed berries strawberries, blueberries, raspberries. 1 package 3 oz strawberry-flavored gelatin. 1 cup boiling water. 1/2 cup cold water. 1 cup whipped cream. Mint leaves for garnish.
Instructions: Preheat your BBQ grill to 350F 175C. In a large bowl, mix the cake mix, water, vegetable oil, and eggs until well combined. Grease a cake pan suitable for the grill and pour in the cake batter. Place the pan on the preheated grill and close the lid. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the gelatin mixture. In a bowl, dissolve the strawberry-flavored gelatin in boiling water. Stir in cold water and let it cool to room temperature. Once the cake is done, remove it from the grill and let it cool for a few minutes. Using the end of a wooden spoon, poke holes all over the cake. Pour the cooled gelatin mixture over the cake, making sure it seeps into the holes. Refrigerate the cake for at least 2 hours or until the gelatin is set. Top the Jello cake with mixed berries and a generous dollop of whipped cream. Garnish with mint leaves before serving. Slice, serve, and enjoy your BBQ Jello Cakes!
