Ingredients: 1 can black beans, drained and rinsed. 1 cup corn kernels, fresh or frozen. 1 red bell pepper, diced. 1 jalapeno pepper, finely chopped. 1/2 cup red onion, finely diced. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. Tortilla chips. 2 cups shredded cheddar cheese. 1/2 cup chopped fresh cilantro. 1 lime, cut into wedges.
Instructions: Set your grill's temperature to medium-high. Black beans, corn, red onion, jalapeo, cumin, chili powder, salt, and pepper should all be combined in a bowl. To make the hot black bean salsa, thoroughly mix. Arrange a layer of tortilla chips onto a sizable grill-safe tray or baking sheet. Spoon a heaping helping of the hot black bean salsa over the chips. Over the chips covered in salsa, scatter some shredded cheddar cheese. After heating the grill, place the tray on it and shut the lid. Grill for five to seven minutes, or until the cheese is bubbling and melted. Using oven mitts, carefully remove the tray from the grill. Top the grilled nachos with chopped cilantro.
