Ingredients: 4 thin beef steaks. 1 cup all-purpose flour. 2 eggs, beaten. 1 cup breadcrumbs. Salt and pepper to taste. 1 cup vegetable oil for frying. 1 can 15 oz black beans, drained and rinsed. 1 cup diced tomatoes. 1/2 cup diced red onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. Juice of 1 lime. Salt and pepper to taste.
Instructions: On both sides, season the steaks with salt and pepper. Each steak should be coated with flour, dipped in beaten eggs, and then coated with breadcrumbs, pressing them firmly onto the steaks. In a skillet set over medium-high heat, warm the vegetable oil. The breaded steaks should be cooked through and golden brown after 34 minutes of cooking on each side. After removing the steaks, place them on a paper towel to absorb any leftover oil. To make the bean salsa, place the diced tomatoes, red onion, cilantro, lime juice, garlic, and salt and pepper in a separate bowl. Present the breaded steaks with the bean salsa on top. If desired, garnish with extra cilantro and lime wedges.
