The classic bloomin' onion appetizer is the source of ideas for this grilled onion blossom sandwich, but it has a healthy twist. Whole wheat buns are smashed together with grilled onions, Swiss cheese, turkey or chicken breast, and fresh vegetables to make a filling and low-carb meal.
Ingredients: 2 large onions. 1 tablespoon olive oil. 1 teaspoon garlic powder. 1 teaspoon paprika. Salt and pepper to taste. 4 slices Swiss cheese. 4 slices turkey or chicken breast. 4 lettuce leaves. 4 slices tomato. 4 whole wheat sandwich buns.
Instructions: Set the grill on medium heat. Cut onions into thick slices without breaking them apart. Salt and pepper should be mixed with the olive oil in a small bowl. For the onion slices, brush the olive oil mix on them. Onion slices should be grilled for 5 to 7 minutes on each side, until they are soft and slightly charred. Toast the buns for the sandwiches on the grill until they are lightly golden while the onions are cooking. After the onions are grilled, put a grilled onion slice on the bottom half of each bun to make a sandwich. Put a slice of cheese, a turkey or chicken breast, lettuce, and a tomato on top of each onion slice. Put the top half of the bun on top. Enjoy while hot!
