Ingredients: 1 lb pork tenderloin, cut into 1-inch cubes. 8 dried apricots. 1 large red onion, cut into chunks. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon ground cumin. 1 teaspoon paprika. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine olive oil, balsamic vinegar, ground cumin, paprika, salt, and pepper to make the marinade. Place pork cubes in a resealable plastic bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 1 hour, or overnight for best results. Preheat your grill to medium-high heat. Thread the marinated pork cubes, dried apricots, and red onion chunks onto the soaked wooden skewers in an alternating pattern. Place the assembled kebabs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
