This grilled veggie sandwich with herbed ricotta is a delicious and nutritious option for a light lunch or dinner. The combination of grilled zucchini, squash, and bell peppers with creamy herbed ricotta cheese creates a burst of flavor in every bite.
Ingredients: 4 slices whole grain bread. 1 zucchini, sliced lengthwise. 1 yellow squash, sliced lengthwise. 1 red bell pepper, sliced into strips. 1 yellow bell pepper, sliced into strips. 1/2 cup ricotta cheese. 2 tablespoons chopped fresh basil. 1 tablespoon chopped fresh parsley. 1 tablespoon chopped fresh chives. 2 tablespoons olive oil. Salt and pepper to taste. Optional: balsamic glaze for drizzling.
Instructions: Warm the grill up to a medium-high level. Olive oil should be used to coat the bell peppers, zucchini, and yellow squash. Salt and pepper should then be added. Grill the vegetables for four to five minutes on each side, or until they are soft and have grill marks. Put ricotta cheese, chopped basil, parsley, and chives in a small bowl. Toast pieces of whole grain bread until they turn a light golden color. Mix the herbs into the ricotta and spread it out evenly on each piece of bread. Put grilled vegetables on top of two slices of bread, then cover with the other slices of bread. Cut the sandwiches in half diagonally and serve them right away. If you want, you can drizzle them with balsamic glaze.
