Healthy Penne Alla Vodka Extract- Non-Non-Non-Alcoholic Alternativeic Pasta
This creamy avocado pasta sauce is better for you than most creamy pasta sauces because it doesn't have any cream in it. Because the avocados are ripe, it's thick and filling. The basil and lemon juice give it a bright, fresh taste. For a tasty and guilt-free pasta dish, you can put it on top of spaghetti squash or your favorite noodles.
Ingredients: 2 ripe avocados, peeled and pitted. 1/4 cup fresh basil leaves. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup grated Parmesan cheese optional. 4 cups cooked spaghetti squash or noodles of your choice.
Instructions: In a food processor or blender, combine the ripe avocados, fresh basil leaves, minced garlic, lemon juice, and olive oil. Blend until the mixture is smooth and creamy. If it's too thick, you can add a tablespoon or two of water to thin it out. Season the sauce with salt and pepper to taste. If you prefer a cheesier sauce, you can also add the grated Parmesan cheese at this stage and blend again until well combined. Once the sauce is ready, heat it gently in a saucepan over low heat, stirring occasionally, until warmed through. Be careful not to overheat it, as avocado can become bitter if cooked at high temperatures. Serve the creamy avocado pasta sauce over cooked spaghetti squash or noodles of your choice.
