Gur Cake
a.k.a. Chester Cake, Donkey's Gudge, Flies Graveyard, and Fruit Slices.
A fruity, spiced sweet pastry traditionally associated with Dublin, Ireland. It was typically made from bakery leftovers.
The filling used for this particular Gur Cake is a mixture of stale bread crumbs, strongly brewed Irish breakfast tea, dried fruits (plump tea-soaked sultanas and zante currants), spices (ground ginger, cinnamon, and cloves), molasses, golden syrup, and a dash of salt. The mixture was then spread evenly onto a homemade shortcut pastry lined baking pan, topped with another sheet of shortcut pastry, and baked. Allowed to cool completely before being cut into squares.
Beverage: Twinings' 'Irish Breakfast Tea' . Sweetened with clover honey and a splash of milk.
