Ingredients: 1 lb dried white beans, rinsed and sorted. 1 onion, chopped. 3 cloves garlic, minced. 2 carrots, diced. 2 stalks celery, diced. 1 lb ham, diced. 6 slices bacon, cooked and crumbled. 6 cups chicken broth. 2 cups water. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste. 1 cup shredded cheddar cheese. Chopped parsley for garnish.
Instructions: Place the dried white beans, onion, garlic, carrots, celery, ham, bacon, chicken broth, water, bay leaves, and thyme into a slow cooker. Cover and cook on low for 8-10 hours or high for 4-6 hours, until beans are tender. Once cooked, remove the bay leaves and season with salt and pepper to taste. Using an immersion blender, blend a portion of the soup to thicken it while still leaving some whole beans intact. Stir in the shredded cheddar cheese until melted and well combined.
