When the weather is cold and dreary outside you make chicken noodle soup for dinner. These hand rolled noodles are made from tapioca and rice flour then cooked in chicken broth, a dish called Khao Piek. Traditionally, the hand rolled noodles are cooked in chicken broth and some chicken pieces. However, I added some Napa cabbage and tofu for extra fiber and veggies to complete a wholesome meal for the family. Because the noodles have tapioca starch and rice flour, the broth thicker which adds a nice body to the soup (similar to a thick and clear gravy broth). The noodles does have have a chewy and gummy texture to it, and has a good bite to the soup. This soup is meant to serve hot just like a chicken noodle soup! Many people add a wide variety of garnishes like finely chopped scallions, cilantro, lime juice, fried onions and garlic, fish sauce, and fried chili oils and even spicier if need be! But for me, I enjoy it more when it’s plain like this!
