Ingredients: 2 cups grated sweet potatoes. 1/4 cup finely diced onion. 1/4 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 1/4 teaspoon cayenne pepper. 1 egg. 2 tablespoons vegetable oil. Cooking spray.
Instructions: Preheat your waffle iron and spray it with cooking spray. In a large bowl, combine the grated sweet potatoes, diced onion, Parmesan cheese, flour, salt, black pepper, paprika, and cayenne pepper. In a separate small bowl, beat the egg and then add it to the sweet potato mixture. Mix until well combined. Brush the waffle iron with vegetable oil to prevent sticking.
