Ingredients: 1/2 cup coconut flour. 2 tablespoons arrowroot flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3 large eggs. 1/2 cup coconut milk. 2 tablespoons coconut oil, melted.
Instructions: In a mixing bowl, combine coconut flour, arrowroot flour, baking powder, and salt. Add eggs, coconut milk, and melted coconut oil to the dry ingredients. Mix until well combined and a smooth batter forms. Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the skillet, spreading it into a thin, even layer. Cook for 2-3 minutes, or until bubbles form on the surface and the edges begin to lift. Carefully flip the flatbread and cook for an additional 1-2 minutes on the other side, until golden brown and cooked through. Repeat with the remaining batter, adding more coconut oil to the skillet as needed. Serve warm and enjoy!
