Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons Caribbean jerk seasoning. 1 cup pineapple chunks. 1 red bell pepper, sliced. 1/2 red onion, thinly sliced. 1 cup shredded lettuce. 1/2 cup fresh cilantro leaves. 8 small flour tortillas. 1 lime, cut into wedges. 1/2 cup sour cream. 2 tablespoons mayonnaise. 1 teaspoon hot sauce. Salt and pepper to taste. Vegetable oil for cooking.
Instructions: In a bowl, toss the shrimp with Caribbean jerk seasoning, salt, and pepper to coat them evenly. Heat a skillet over medium-high heat with a drizzle of vegetable oil.
