Women in Pizza: Ann Kim
**In celebration of Women’s History Month, I’ll be posting about women in the pizza community every few days this month. The pizza biz is pretty male-dominated, so let’s take this opportunity to throw the spotlight onto some of the women who are doing amazing work in the pizza world.

“Running a successful restaurant is not for the faint of heart,” says Ann Kim, owner and chef of Pizzeria Lola, which opened in Minneapolis in 2011. “When the dishwasher is sick, be prepared to roll up your sleeves and do the dishes yourself. Investing in a restaurant is more about investing time, passion and energy than it is about money.”
Before opening Pizzeria Lola, which is named after Ann’s dog Lola, Ann was a freelance actor for 10 years, performing in various theaters in Minneapolis. She also worked as the director of education and community engagement at Hennepin Theatre Trust in Minneapolis.
“I’ve always had a passion for cooking and dreamed about someday opening a restaurant of my own,” says Ann. “I spent years daydreaming about different concepts, and since I didn’t have professional culinary experience, I knew I had to keep things simple. I ultimately decided to focus on one thing and do it better than anyone else. Our approach was simple: great pizza and great service in a fun setting.
“The inspiration behind the pizzeria came from spending my formative pizza eating years attending college in New York and my business partner’s time in New Haven, Connecticut—two cities known for outstanding pizza. We couldn’t find the kind of pizza we wanted to eat nearby, so we decided to create it.
“Once I had my focus, I researched and read several books on artisan baking and experimented with dough formulas, flours and yeast. I received intensive, hands-on training, gaining certification in American-, Neapolitan- and Sicilian style pizzas. Out of all the styles, I fell in love with cooking pizzas in a wood-fired oven, so I decided to create artisan quality wood-fired pizzas.”
Since opening Pizzeria Lola in 2011, Ann also opened a NY-style slice shop called Hello Pizza in 2013 in Edina, Minnesota.

Cannes is coming! Et ça se sent! Le web se voit envahit de campagnes toutes plus réussies les unes que les autres. Parmi elles, celle de CNA “Hello Pizza” a particulièrement retenu mon attention.
Pour apprendre une langue, le mieux c’est évidemment de pratiquer et en classe, ce n’est pas toujours évident. CNA, avec l’aide de l’agence FCB, a donc eu l’idée géniale d’intercepter les appels de clients s’apprêtant à commander une pizza. A partir de là ils ont le choix: passer par le canal traditionnel et commander directement via la pizzeria ou discuter avec un étudiant brésilien qui va prendre sa commande et ainsi l’aider à améliorer son niveau. Le tout en bénéficiant d’une réduction car plus ils parlent ensemble, moins le client paiera cher sa pizza!
C’est ludique, utile, extrêmement bien pensé et bien foutu, les élèves y gagnent, les clients et même la pizzeria au final! Que demander de plus? Un lion peut-être.

HELLO PIZZA IS ONE OF THE FEW PIZZA PLACES AND THE ONLY ONE I PRACTICALLY FELL IN LOVE WITH. IT BEATS MAMAS AND PAPAS BY A LONG SHOT BECAUSE THE FLAVORS ARE LEGIT GOD SENT.
FOR ONE ITS NOT OILY. THEY WILL MAKE IT IN FRONT OF YOU AND YOU CAN SEE WHAT THEY DO. BUT HOLY SHIT I JUST LOVE THE TASTE. THE SMELL IS ALSO FANTASTIC ESPECIALLY THIS ONE PIZZA KNOWN AS GOLD POTATO.
ALSO ALSO EVERY SINGLE DAY THEY DO 30% DISCOUNTS ON CERTAIN PIZZAS. EVERY DAY OF THE WEEK CHANGES THE MENU OF DISCOUNTS WHICH IS WHY IM DEPRESSED THAT I WENT THERE TODAY RATHER THAN YESTERDAY. UGH FUCK ME.
POTATO GOLD CONSISTS OF HAVING A SWEET POTATO CRUST, THE TOPPINGS ARE TECHNICALLY GROUND BEEF, CORN, ONION, POTATO, CHEDDAR CHEESE, BACON, AND SOUR CREAM. WHEN YOU EAT IT FIRST BITE YOURE IN HEAVEN BECAUSE HOLY SHIT ITS LIKE LIQUID GOLD. I WOULD SAY ITS REALLY WORTH IT AND YOU WILL KEEP EATING. THE TASTE IS SO GOOD EVEN THOUGH YOUR STOMACH MIGHT NOT HANDLE IF YOU ATE LIKE MAYBE TWO LARGE BOXES LOLOLL.
THE ONE FLAW IT HAS IS THAT IT'S PRETTY PRICY FOR A PIZZA PLACE. THE FUCKING REGULAR SIZE BOX POTATO GOLD IS 16$. IT MAKES SENSE CUZ ITS A PREMIUM AND THATS WHY YOU NEED TO GO ON FUCKING WEDNESDAY.
