This Vegan Spicy Smashed Potato Salad is a flavorful and satisfying side dish that pairs perfectly with any meal. The potatoes are roasted until crispy and then tossed with a zesty mixture of spices, fresh herbs, and tangy lime juice.
Ingredients: 6 medium potatoes, washed and halved. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. 2 green onions, thinly sliced. 1/4 cup chopped fresh cilantro. Juice of 1 lime.
Instructions: Warm the oven up to 425F 220C. To make the potatoes fork-tender, boil them in salted water for about 15 minutes. Let it drain and cool down a bit. Squash the potatoes a little with a fork or potato masher after putting them on a baking sheet. Mix paprika, cayenne pepper, salt, and pepper with olive oil in a small bowl. Spread the mix on top of the mashed potatoes. After the oven is hot, roast the potatoes for 25 to 30 minutes, or until they are crispy and golden brown. Take the potatoes out of the oven and put them on a serving dish. Add lime juice, chopped cilantro, and thin slices of green onions on top. Carefully toss to mix. You can serve it hot or cold.
