Easy Fruit Salad Honey Lime Poppy Seed Dressing
So tender grilled chicken marinated in a spicy honey lime sauce is served on a bed of healthy edamame rice in this tasty dish.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup honey. 3 tablespoons soy sauce. 2 tablespoons lime juice. 2 cloves garlic, minced. 1 teaspoon red pepper flakes. 1 cup rice. 1 3/4 cups water. 1 cup shelled edamame. Salt and pepper to taste. 2 green onions, thinly sliced for garnish.
Instructions: To make a marinade, mix honey, soy sauce, lime juice, minced garlic, and red pepper flakes in a small bowl. Put the chicken breasts in a shallow dish or a plastic bag that can be closed again, and then pour the marinade over them. Make sure they are covered evenly. Put the mixture in the fridge for at least 30 minutes to marinate. Bring water to a boil in a medium-sized pot. Turn the heat down to low, cover, and simmer for 18 to 20 minutes, or until the rice is done and the edamame is soft. Set the grill or grill pan over medium-high heat while the rice is cooking. Take the chicken out of the marinade and throw away the extra marinade. Add salt and pepper to the chicken. Cook the chicken on the grill for about seven to eight minutes on each side, or until it's done and the juices run clear. The cooking time may change based on how thick the chicken breasts are. When the chicken is done, take it off the grill and let it rest for a few minutes. Then, cut it into pieces. Put sliced chicken on top of edamame rice and top with thinly sliced green onions. Instructions: Put frozen peach slices, chunks of watermelon, lime juice, honey, and ice cubes in a blender. Mix until it's smooth. If using vodka, put it in the blender and blend it for a short time to mix it in. Fill up glasses with the mix. Put mint leaves and slices of watermelon on top. Enjoy! Serve cold.
