The biggest difference between Critical Role and The Adventure Zone is the feel of it. CR plays out like the brainchild of your eldest brother (or something I, the oldest sibling, would write): "I've spent years researching this and developing an intricate weave of canon-and-rules-mostly-compliant lore" and The Adventure Zone is like when your youngest brother plays Minecraft and is like "hey look I made a historically accurate WW1 trench!" and it somehow looks just as detailed as something you'd make but it feels infinitely more creative.
It's like Matt and Sam's reaction to being told Liam's story was going to be Spooky(tm): Matt went all out with lighting, costume, makeup, etc. Sam had a moment of panic and his first reaction seems to have been to forget that makeup existed and instead scrambled to find a wine cork and a lighter and just rubbed the result all over his face.
They're both great in their own way, creativity coming through their personalities.
