My personal headcannon is that Ghost-Mettaton wasn't happy (obviously) but, he didn't think it was possible for him to ever *Be* happy, so, he focused on keeping the people around him happy instead. Then when Alphys actually shows him a way he can be what he wants, he jumps on it imedietly. At least, that's how I read what was in the diaries.
Yes, I agree. He was unhappy but he cared deeply about the people around him, specifically Blooky. Im his diaries he says he's never going to leave them... But as you mentioned, once he realised his dream could become reality, that love wasn't enough to keep him home with them, he wanted this too much.
