I had a cucumber & some radishes that were on their last days, so I cut them up and added red onion, garlic cloves, peppercorns, a variety of dried herbs, one cup of vinegar (half white + half red wine vin... you could also use apple cider vin, really whatever you have on hand) and one cup of water.
