i made my mam's jam biscuits but i used raspberry jam instead of strawberry and the taste upgrade from that simple change is unbelievable

jam biscuit recipe!

@soviet-gamer-girl and @illuminated-interlude asked for this back when i posted my pictures but i hadn't gotten round to writing it down until now. it's a rlly simple and easy recipe so i thought it's a nice thing to share + it's almost an early christmas present :))

ingredients:

300g flour

150g sugar

1/2 of a lemon peel (grated off)

1 egg

200g cold butter

about 100g jam of your choice

steps for making:

preheat oven to 180°C (360°F, no fan)

mix together flour, sugar and lemon peel in a shallow bowl (you'll need to knead the dough so make sure it's wide enough and easy to reach into)

add egg and butter (cut into small pieces to make rubbing in easier)

rub it all together (best to do this by hand, i haven't ever tried it with an electric mixer but i imagine the dough gets too stiff)

roll out and start cutting out round shapes

use a smaller cutter to cut out the middle of every second circle

place the circles without the cut-outs on a baking tray with parchment paper and add a heaped teaspoon of jam (or adjust amount to the size of the biscuit). press the jam flat and spread it a bit (it will "melt" and flow apart during baking though, so this isn't that important)

now place the circles with the cut-outs on top of the biscuits with jam

bake for roughly 10min until the dough is golden-brown

extra notes:

raspberry jam is the best, i don't make the rules

u don't have to use circle cookie cutters, it can be any shape as long as you can cut out part of the middle :)

I used Dove's Farm gluten free flour, lemon extract rather than almond, and raspberry and pineapple & ginger jams.
