Brewery of Ishidaya [Kokuryu Ryu] Daiginjo Sake, Fukui prefecture. They apply wine maturation methods which they learned in France and Germany to produce their sake using spring waters from Hakusan mountains and Brand A Yamadanishiki rice. For those who are not so sake savvy (which includes myself!), one of the requirements to be called a daiginjo sake is to use rice kernel that is that a minimum of 50% the outer layers (bran) polished way.
