Ingredients: 8 chicken thighs, bone-in, skin-on. 1/4 cup olive oil. 1/4 cup soy sauce. 2 tablespoons apple cider vinegar. 2 tablespoons honey. 2 teaspoons smoked paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon dried thyme. 1/2 teaspoon black pepper. Wood chips for smoking.
Instructions: Combine olive oil, soy sauce, apple cider vinegar, honey, smoked paprika, garlic powder, onion powder, dried thyme, and black pepper in a bowl to create the marinade. Place chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight for optimal flavor. Preheat your smoker to 225F 107C and add wood chips for smoke flavor. Remove chicken thighs from the marinade and let excess drip off. Place them on the smoker rack. Smoke the chicken thighs for 2.5 to 3 hours or until the internal temperature reaches 165F 74C. Baste with additional marinade every 45 minutes. Once done, remove from the smoker and let them rest for 10 minutes before serving.
