Bihar Ka Peetha Fara/Goojha is a traditional dumpling recipe from Bihar, India. These dumplings are made with rice flour and filled with a delicious mixture of cauliflower, bottle gourd, and spices. They are deep-fried to crispy perfection and make for a delightful snack or appetizer.
Ingredients: 1 cup rice flour. 1/2 cup finely chopped cauliflower. 1/2 cup grated bottle gourd lauki. 2-3 green chilies, finely chopped. 1/2 teaspoon cumin seeds. 1/2 teaspoon mustard seeds. A pinch of asafoetida hing. 2 tablespoons oil. Salt to taste. Oil for frying.
Instructions: Put 2 tablespoons of oil in a pan and heat it up. Then add the asafoetida, mustard seeds, and cumin seeds. Allow them to cough. Grate the bottle gourd and chop the cauliflower into small pieces. Saut them for five to seven minutes, or until they're dry and soft. To the vegetables that have been sauted, add the chopped green chilies and salt. Take it off the heat and mix it well. Mix the rice flour and the cooked vegetables together in a large bowl. Mix everything together well until it looks like dough. You can add a little water to the mixture if you need to. Now, use small amounts of the mixture to make small dumplings that are shaped like cylinders. Warm up the oil in a deep pan so that you can fry the dumplings in it. While being careful, add the dumplings to the hot oil and fry them until they are golden brown and crispy. After the dumplings are done cooking, take them out of the oil and pat them dry with a paper towel. Put it on the table hot with your favorite sauce or chutney.
