Mina writes on Oct 1: "I kept thinking over everything that has been ever since Jonathan came to see me in London, and it all seems like a horrible tragedy, with fate pressing on relentlessly to some destined end."
If you’re thinking, “Wait, Jonathan never visited Mina in London in the book,” you’re right! That’s because in the original drafts, the story was going to begin in March rather than May. In that version, Jonathan traveled from Exeter to London to take photographs of Carfax with his Kodak and visited Mina nearby.
According to the outline, after his photographs were approved, Jonathan stopped by to see his fiancée at the school where she was teaching (April 16) before leaving for Transylvania. This is the visit Mina refers to in her journal, though it was omitted from the final version.

Man imagine being Kate, last time she heard of her good friends/ex classmates before vacation it was all exciting gossip, telling the engaged-to-be-married Mina about Lucy seeing a curly haired man.
Then it's radio silence all summer until Mina likely mails her that she's settled in her new home in Exeter from Hungary where she got married, because long story but Jonathan was found there in a ditch. Perhaps she gets told Lucy is to marry a lord in late September, which is exciting she can't wait!
Then soon later learning from Mina (because who else will inform her all the Westenras are dead) that Lucy died a week before her wedding and they've both missed the funeral. She tells Kate she can drop by anytime. Then imagine her paying a visit to Mina for the first time in early October only to be greeted by the housekeeper who tells her that the Harkers have suddenly left the country indefinitely.
And then she learns that Mina and Jonathan have returned a month and a half later. And when she finally visits she cannot recognize them. Absolute madness.
She is going through a lot! It's bonkers to think about how the communication channels of the day would make it so easy to be out of the loop, even with the introduction of telegrams to make it easier to keep track of each other. Poor Kate has a lot of catching up to do!

I agree, even if Kate Reed was explicitly present/canon, Mina would likely not be opening her heart and soul to her like she's doing to Lucy. She's the mutual friend from school who enjoys informing her friends about gossip and romance updates, and Lucy's cut letter lines ("that lynx" "give her a kiss from me") show they have mainly a playful relationship, than having the level of closeness Mina and Lucy sharing secrets by the fire since they were kids etc. I know I'd not be sharing deeply personal things like my feelings about Jonathan's mental state with my old school pals on facebook.
Absolutely. And we'll of course never know how close a relationship they were originally meant to have, but it does seem like the reason she was cut was because she mostly only fulfilled the role of "casual friend who shares the gossip" rather than someone to be relied upon in the darkest times. And for that purpose, just alluding vaguely to "the girls" works just as well without adding another character to keep track of.
May 9th, Letter to Lucy Westenra from Mina Murray
Dear Lucy,
I hope you can find it in your heart to forgive the delay. But I have been stressing myself out with work. The life of a teacher is…Incredibly taxing. I want to be with you, by the sea, where we can talk together freely and build castles in the air. I have been hard at work lately, because I want to keep up with Jonathan’s studies, and I have been practicing my shorthand (I’m getting very good at it, wouldn’t you know?).
I want to be helpful with Jonathan’s work, but it’s tricky sometimes. He can write entire letters in shorthand and he is keeping a stenographic journal while he travels north. When I am with you, I shall keep a diary in the same way and write when I can. I don’t suppose this would interest a lot of people. I might share it with Jonathan…Or Kate if you still have her hanging off you. Could you have her send me an example article from her, I’d like to practice writing like a journalist, if I can. Interviewing, writing descriptions, like an old-world lady journalist.

I realize that maybe it's the right time to say it...
In the drafts of Dracula, Bram Stoker gave to the correspondent from Withby a name, and he was an actual character in the story, he was Alfred Singleton and was a sort of foil to Abraham Van Helsing, but with some kind of psychic abilities, and that's the reason he was eliminated. There were more other characters, a painter named Francis Aytow that painted the big tempest that brought the Demeter to Whitby and subsequently met Dracula and went mad while trying to paint him, and a Detective named Cotford that would investigate later events thinking there was foul play in some of the deaths, and a modern woman named Kate Reed that was another journalist with Singleton.
