A delicious keto-friendly breakfast featuring almond flour biscuits topped with a creamy egg gravy and fried eggs.
Ingredients: 2 cups almond flour. 2 tsp baking powder. 1/2 tsp salt. 1/4 cup unsalted butter, melted. 2 large eggs. 1/4 cup heavy cream. 1 lb breakfast sausage. 4 large eggs. 1 cup unsweetened almond milk. 2 tbsp coconut flour. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, baking powder, and salt. Add melted butter, eggs, and heavy cream to the dry ingredients and mix until a dough forms. Shape the dough into 8 biscuits and place them on the prepared baking sheet. Bake for 15-18 minutes or until golden brown. While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat until browned and cooked through. Once the sausage is cooked, remove it from the skillet and set aside. In the same skillet, add almond milk and coconut flour, whisking until well combined and thickened. Add the cooked sausage back into the skillet and stir to combine. In a separate pan, fry the eggs to your desired doneness. Serve the biscuits topped with the creamy egg gravy and fried eggs. Season with salt and pepper to taste.
