This Keto Holiday Appetizer Platter combines the savory crunch of bacon-wrapped tomatoes with the fresh flavors of caprese skewers, making it a perfect low-carb option for your holiday gatherings.
Ingredients: 1 package of bacon slices. 18 cherry tomatoes. 18 small mozzarella balls. 18 small basil leaves. 1/4 cup balsamic vinegar. 1 tablespoon olive oil. Salt and pepper to taste. Toothpicks.
Instructions: Preheat the oven to 400F 200C. Cut the bacon slices into halves. Wrap each cherry tomato with a half slice of bacon and secure with a toothpick. Place the bacon-wrapped tomatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy. While the tomatoes are baking, prepare the caprese skewers by threading a mozzarella ball, a cherry tomato, and a basil leaf onto a toothpick, repeating until you have 18 skewers. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper to make a dressing.
