Ingredients: 1 lb chicken, cooked and shredded. 1 cup rice, uncooked. 4 carrots, diced. 4 celery stalks, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 8 cups chicken broth. 2 tablespoons olive oil. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, saut until softened. Add carrots and celery, cook for 5 minutes. Pour in chicken broth and bring to a boil. Stir in rice, shredded chicken, thyme, rosemary, salt, and pepper. Reduce heat, cover, and simmer for 20-25 minutes or until rice is cooked. Adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
