I work evenings now, and I feel like I'm always too busy to make dinner properly, and I honestly got tired of delivery. Yes, really. I know, I was surprised too. So last week I decided to make a giant batch of Mushroom and Leek Frittata that I could not only take to work for myself during the week, but have some left over for my grandparents since I'm never home to cook dinner these days. It was an absolute hit! I made two batches, one with the mushrooms very finely chopped, and then a second one after my family's constructive criticism and left the mushrooms whole and added a lot more seasonings to the actual egg mixture itself. The only thing that I personally couldn't stand is that on my second attempt all of the leeks and mushrooms went to the bottom, and the egg was on top. And if anybody knows me you'll know that I can't stand that much egg in my mouth at one time. I don't know if it's a texture thing or what because I love quiche, but I can't handle scrambled eggs or omelette.
