Day 22/30
So this 30-day round of keto was supposed to end a week from today, but I’m extending it to September 2nd, because that’s the day my SO is flying into town and I know I’ll have a couple cheat meals while he’s here. So now this is a 39-day challenge lol.
I’m still doing vegetarian keto on workdays, and I’ll continue this until the end. This is a yummy stir fry I prepped earlier! Pan fried tofu and veggies in a homemade stir fry sauce. Carb count is a smidge high because I included bell peppers but everything else, including the sauce, is pretty safe.
Yesterday turned into a bigass cheat day, because it was my best friend’s birthday. So we did brunch/mimosas and cake. My disordered brain wanted to fast today, but I resist that shitty little voice and went right back into my routine. Also, that’s only the second time I’ve cheated since starting this round and I’m okay with that.
Remember how last night I made the healthy decision to eat chicken and veggies solely for the scale to be kind to me today? Of course that means I gained :) BUT, I’m well aware that this is the game we play when we weigh every day. Because I weigh every day I need to not obsess over the numbers as much as the overall picture. (saying it makes it true, yes?)
I am well aware that I’m only able to get this silhouette due to tight high-waisted spandex, but I’m okay with that.
Made my chaffles today with some diced jalapeno. Definitely something I’ll try again as well as it encourages me to continue to mix things up!
Erp does this thing now where she loves to kick things out of her bassinet so today her firefly landed in my coffee :)

Went out to the garage today to do my lifts and I find bird poo on my bench?! Apparently a bird has been in my garage. I hope they’re okay and managed to get out while the doors were open.
Dinner tonight was moar chicken! Paired with a cucumber, feta, tomato salad. Deeeelish! Am I tired of chicken yet? NOPE.

Garlic cream cheese stuffed portabella mushrooms ❤️ going to start posting more of the stuff I make as well as progress pictures. Unfortunately I’ve gained a lot of weight back from 2 years ago but I was in a bad place and went back to eating really bad food everyday.
SO. This is definitely a work in progress. I REALLY was craving some greens and Nutrients and wanted a green smoothie, but had to figure out how to make it keto friendly. I decided on 1/2 an avocado to replace a banana I’d normally use, 1/2 a cucumber, half a bag of spinach, ginger, lime juice, matcha powder, and a bit of water. I wanted to sweeten it, so I started with 1 tsp of honey, then figured I’d try the stevia I use for coffee. The flavor honestly is pretty good! However, it’s very low calorie. I think next time, I’ll use an entire avocado, a little less water for a thicker consistency, and maybe experiment with some canned coconut milk. If I could find a non-flavored plant based protein powder I like, I could add that too and make it a whole meal.
I will definitely make an update next time I make this and tweak it! Also, can we talk about the fact that I’m NOT an avocado lover, have never purchased an avocado in my life, picked one based off a Tumblr post I saw years ago, and managed to pick the perfect one? So satisfying.
