Hasselback potatoes with cheese are a fun and tasty side dish that kids will love. They are too good to resist because the cheese is gooey and the edges are crispy.
Ingredients: 4 medium-sized potatoes. 4 tablespoons butter, melted. 1 cup shredded cheddar cheese. 2 cloves garlic, minced. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Use a paper towel to dry the potatoes after you're done washing them. Set the potato on a cutting board and cut it into thin slices across the potato. Be careful not to cut all the way through. Do it again with the rest of the potatoes. Melt the butter and chop the garlic into small pieces. Making sure to get between the slices, brush the potatoes with the garlic butter mix. Add salt and pepper to the potatoes. Put the potatoes on a baking sheet that has parchment paper on it. After the oven is hot, bake the potatoes for 45 to 55 minutes, or until they are soft and the edges are golden. Once the potatoes are done, take them out of the oven and sprinkle them with shredded cheddar cheese. Make sure to get cheese between the slices. Put the potatoes back in the oven and bake for five more minutes, or until the cheese melts and starts to bubble. Before serving, sprinkle with chopped fresh parsley.
