New knife on the site... Gesshin Uraku 210mm Stainless Kiritsuke Shaped Wa-Gyuto... these are a different steel from our normal Gesshin Uraku series. They are VG1. The knives are also ground thinner and have nicer fit and finish overall. You can expect them to be easier to sharpen and have slightly better edge retention than the original, with only a slight loss in toughness (still among the most tough and durable blades we sell).
