Should industrial agriculture have its way, there would be no other breeds other than high production commercial breeds. The animals would never peruse and forage from a pasture and would have little contact with humans. Cows, chickens & pigs would all have the same diet based on tax payer subsidized corn and soy, laced with antibiotics. Meanwhile, mortality rates get worse, childhood cancer and other diseases continue to grow exponentially. Everyone will be on at least 5 prescriptions for ADHD, diabetes, asthma, blood pressure, and insomnia. Stilllll drooling over this pork chop that @matt.tulpa made last night. Brined and grilled on the our Konro Grill, the char and flavor makes this the best pork chop I've ever had! I really don't eat pork chop and prefer pork by way of BBQ Ribs but when you've got quality meats, the flavor is indescribable! This organic pork chop from @gccorganics1 come from pigs that are pasture raised, wander freely & harvest on acorn mast & root which is raised traditional like those in Spain (hello jamón ibérico de bellota! 💯). This traditional method of pork production is more humane for the pigs, better for the environment and much healthier to consume. Learning and practicing the balances of give and take. Recently I've been introduced and have had the pleasure and honor of getting to know more fierce Aries women! The fierce really does turn into a magic fire! Thanks to chicken eggs from #sarvodayafarms @thegrowingclub and @3coffeela and some overly priced bean sprouts from the encino farmers market, Jess and I successfully completed our first collaborative Sunday brunch challenge. Met at the farmers market, asked lots of questions to the vendors, purchased some produce & shared our ideas, and put it to the test in the kitchen. Our results: 2 interpretations of eggs bennedict • sourdough pancake base, poached egg, buckwheat honey hollandaise • bánh mì ốp la inspired with baked bread, Asian style hollandaise/mayo, poached egg, bean sprouts, and herbs from brown town garden :) also experimented with an horchata iced coffee using a mix of white and brown rice. (My recommendation: don't use short grain rice for horchata!) thanks for the giveaway prizes from the weekend :) also as I practice more zero waste I refused all plastic at the market except I forgot to bring my own fork for a tamale I ate so next time I will bring my own utensil!! #lovetocook #knowthyfarmer #strivingforzerowaste
