That thing of when you’re a little busy and you forget to check your miso for 18 months. Oop. It looks good though! We use way too much miso in our mac & cheese to use homemade (workaday, lovely @misomaster is great for that), but our miso sesame caramels and #rammissary (coming back the third week of July hellllooooo) will be loving up on it soon enough. #kojibuildscommunity (at Lagusta's Luscious Commissary)
Broccoli sautéed in cilantro scallion coriander seed oil with fermented garlic. Dusted very lightly with our smoked pepper and dried hot pepper miso powder. Broccoli in a very low sodium brine for 3 days so neither salt nor lemon nor vinegarvrequired. Last week the temperature in our #miso cabinet got really high and the#koji based #ferments got all wild! Even with 50 pounds of weight this #miso overflowed after getting quite puffy. If we were in our old country barn in #newyork no problem. But in #nyc #hellskitchen its different. Would you add more #kojibuildscommunity or #legumes to this and turn it into a fastmiso or a #shoyu ? BTW it tastes amazing already. We're thinking of adding either heavily toasted oat groats from @scottmorganics or #brownrice grits to make a #namamiso or a #hishio. It's a 75% #koji miso with a 14% salt content. @culturesgroup #culturesgroup #chefkenfornataro
